I'm thinking about trying Pop!_OS just because of their new desktop environment, I even out of nowhere got an extra USB drive sent by the universe to do it, I almost did it today, but just thinking about the troubleshooting I got demotivated... your blog makes it seem really easy though, gonna make a bootable USB first just to test hardware compatibility though
