Turned out the problem with PDF embeds was a problem with my browser, so I changed my settings and that fixed it. If you're on Firefox and can't see embedded PDFs, change your preferences for them to "open in Firefox" vs. "ask" or "save file" and they should work. Not sure why that changed, since it worked with them set to "ask" on my end before.
