I really want to know how to make my site theme change with buttons, or a drop-down menu, but I'm worried that's gonna involve rewriting everything.

A drop down menu shouldn't require too much effort tbh, here's a tutorial: https://www.w3schools.com/css/css_dropdowns.asp Not sure about the site theme button though.
you can use javascript for changing site themes! it's actly quite simple u can modify something like this https://www.w3schools.com/howto/howto_js_toggle_dark_mode.asp
